Baked Ham
INGREDIENTS:
- 1 fully cooked ham, bone-in, about 7 to 8 pounds
- 1 cup pure maple syrup
- 2 tablespoons all-purpose flour
- 1 1/2 teaspoons prepared mustard
- 1 cup water
- 2 teaspoons Worcestershire sauce
PREPARATION:
Preheat oven to 325°. Place ham on a rack in a shallow
roasting pan. Bake for 1 hour. Pour pan juices into a small
saucepan and cool quickly in freezer to solidify fat. Pour
maple syrup over the ham and return to oven. Bake 30 minutes
longer, basting once with syrup from bottom of pan.
Meanwhile, remove the saucepan from freezer. Remove and
discard the collected fat. Whisk in flour and prepared mustard
until smooth. Whisk in water and Worcestershire sauce. Increase
the oven temperature to 375°. Baste ham with pan drippings.
Bake about 15 minutes longer, or until meat thermometer
registers 140°. Insert the instant read or meat thermometer
in the thickest part of meat, not touching bone. Remove
ham to a cutting board and let stand 15 minutes before carving.
Add the pan drippings to the saucepan. Bring to a boil over
medium heat, whisking frequently. Gently boil the sauce
for 3 minutes, until thickened. Transfer sauce to a gravy
boat or other serving dish and serve alongside the carved
ham.
Serves 8 to 10 with leftovers.

Ham with Marmalade and Orange
Juice
INGREDIENTS:
- 1 boneless canned or fully cooked smoked ham, about
4 pounds
- 1 jar (10 ounces) orange marmalade
- 1/2 cup orange juice
- 1 tablespoon prepared mustard
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground ginger
- 1/2 cup raisins
PREPARATION:
Place ham on a rack in roasting pan, fat side up; score
fat. Bake at 325° for 1 hour and 15 minutes. In a saucepan
over low heat combine marmalade, orange juice, mustard,
cloves, and ginger. Simmer for 5 minutes. Spoon half of
the orange mixture over the ham; continue baking for 30
minutes. Add raisins to the remaining orange mixture and
serve with ham. Serves 10 to 12.

Ham with Brown Sugar-Sweetened Beer Glaze.
INGREDIENTS:
- 1 fully cooked ham, about 3 to 4 pounds
- 1 cup beer
Beer Glaze
- 1 cup brown sugar
- 1 tablespoon flour
- 1 teaspoon dry mustard
- 2 tablespoons red wine vinegar
- beer to make a smooth paste
PREPARATION:
Place ham in uncovered roasting pan. Pour 1 cup of beer
over the ham; bake at 350° for 1 hour; baste with drippings
every 15 minutes. Meanwhile, combine ingredients for beer
glaze. Remove ham from oven and score fat diagonally in
a criss-cross fashion. Stud with whole cloves and spread
with beer glaze. Roast for 30 to 45 minutes longer, or until
well glazed and cooked through. The internal temperature
of a fully cooked ham should be 135 degrees.

Ham with Sweet Bourbon-Mustard Glaze
INGREDIENTS:
- 1 cup honey
- 1/2 cup molasses
- 1/2 cup bourbon
- 1/4 cup orange juice
- 2 tablespoons Dijon mustard
- 1 ham half about 6 to 8 pounds -- fully cooked
PREPARATION:
Combine the honey and molasses; heat in the microwave or
in a pan on the stove top. Stir in bourbon, orange juice,
and mustard. Remove all but about 1/4-inch of fat from the
ham, then place in a roasting pan. Bake at 325 for about
1 1/2 hours, or until a meat thermometer reaches 140 degrees
(About 10 minutes per pound). Baste the ham occasionally
with the honey-bourbon mixture. Transfer drippings to a
saucepan and add remaining honey mixture; bring to a boil.
Slice ham and serve with the glaze.

Daniels Glazed Ham
INGREDIENTS:
- 4 to 6 pound boneless fully cooked smoked ham half
- 1/3 cup light brown sugar, firmly packed
- 1/3 cup Jack Daniel's Tennessee Whiskey
- 1 tablespoon finely grated orange peel
- 1/8 teaspoon ground cloves
- 1/4 teaspoon ground allspice
- orange slices, thinly sliced
- curly endive, for garnish
PREPARATION:
Preheat oven to 325°. On a rack in a roasting pan,
roast ham, uncovered, for about 20 minutes per pound, or
until a meat thermometer reads 140° F. Before ham is
done, simmer a mixture of the brown sugar, Jack Daniel's
whiskey, orange peel, cloves, and allspice over medium low
heat for about 15 minutes, or until slightly thickened.
Brush the glaze over the ham about 20 minutes before done.
Serve the ham garnished with orange slices and endive, if
desired. Serves 6 to 8

Mustard Glazed Ham
This is an easy glazed ham recipe, made with marmalade,
garlic, brown mustard, ginger, and other ingredients.
INGREDIENTS:
- 1 fully cooked ham, boneless, about 5 pounds
- 1 jar (16 to 18 ounces) orange marmalade
- 1 tablespoon plus 2 teaspoons dry mustard
- 1/2 cup spicy brown mustard
- 1 clove garlic, minced
- 1/2 teaspoon ground ginger
PREPARATION:
Place ham on a rack in roasting pan, fat side up. Score
fat of ham in a diamond pattern. Combine remaining ingredients,
stirring until well blended. Refrigerate half of the mixture.
Brush ham with remaining half of mixture. Bake ham at 350°
for about 2 hours, or until a meat thermometer registers
140° F. Brush with the marmalade mixture every 15 to
20 minutes.
Serves about 10.

and Sour Ham with Vegetables
A ham recipe with vegetables.
INGREDIENTS:
- 1 large onion, coarsely chopped
- 4 medium potatoes, cut in chunks
- 3 medium carrots, cut in chunks
- 1 slice (1 to 1 1/2 pounds) fully cooked ham
- 2 teaspoons dry mustard
- 1/4 cup light brown sugar, firmly packed
- 2 tablespoons vinegar
PREPARATION:
Cook onion and potatoes in a small amount of lightly salted
water until tender, about 15 minutes; drain. Sprinkle ham
with mustard, brown sugar and vinegar. Place ham in a shallow
baking pan and place under the broiler about 4 inches from
heat.
Broil ham until browned; turn it over, spoon juices over
ham and broil the other side until lightly browned. Put
ham on serving platter; arrange vegetables around ham. Pour
pan drippings over ham and vegetables.
Recipe for sweet sour ham serves 4.

Honey Ham
This is an easy baked ham recipe with honey and spices.
Ingredients:
1 fully cooked smoked butt or shank-half ham, about 5 lb
each, skin trimmed
- kitchen string
- 2 cups honey
- 2 cups brown sugar
- 1/3 cup cider vinegar
- 2 tsps. nutmeg
- 2 tsps. ground cinnamon
- 2 tsps. cloves
Instructions
Slice ham halfway through at 1/4 inch intervals, then tie
with string. Place in roasting pan. Combine remaining ingredients
in a saucepan. Stir over medium heat until warm. Pour sauce
over ham. Marinate in refrigerator 24 hours. Preheat oven
to temperature 325°F. Bake 1-1/4 hours or until heated
through.

Mustard Glazed Ham
This is an easy glazed ham recipe with maple syrup and

Ingredients:
- 2 Tbsps. vegetable oil
- 1/4 cup onion\cooked, minced
- 1 cup pure maple syrup
- 1/2 cup cider vinegar
- 2 Tbsps. Dijon mustard
- 2 Tbsps. mustard seed
- 1 boneless ham, about 5 lb each
Instructions:
Preheat oven to temperature 425°F. Combine first 6
ingredients and pepper to taste in a heavy saucepan. Bring
to a boil, stirring about 1 minute. Set aside to cool. Cut
diamond pattern on the outside of ham. Place ham on a lightly
oiled roasting rack. Place in a shallow roasting pan. Brush
syrup mixture over ham. Bake 5 minutes, reduce heat to temperature
325°F, and bake another hour, basting with syrup mixture
every 15 minutes. Remove ham from oven and set aside 15
minutes before slicing.
